Easy Mexican Chicken: Quick and Flavorful

If you have some chicken breasts, love Mexican food and not a lot of time, you can have an easy meal in about 30 minutes! While the chicken is in the oven, you can prep whatever you want to go with the chicken.

How to serve

There are so many different ways that you can use this recipe! Some ideas are:

  • A Taco Salad
  • On top of rice
  • As a a burrito or taco
  • Or simply by itself with a a yummy dip

You can use a packet of  your favorite taco seasoning packet for this recipe.

Chicken Storage

Cooked chicken can be safely stored in the fridge for 3 to 4 days. It’s important to store it in an airtight container. If it smells or looks weird, it’s best to toss. Remember, when in doubt, throw it out!

Ingredients
  

  • 3 lb Chicken Breast
  • 2 tbsp Olive Oil
  • 3 tbsp Taco Seasoning See recipe notes

Instructions
 

  • Preheat the oven to 425°.
  • Cut the chicken into bite sized pieces, and place in a 9" x 13" glass baking dish.
  • Add olive oil to chicken and mix with hands until thoroughly mixed.
  • Bake for 15-20 minutes or until chicken temp reads 165°.
  • Eat by itself or use as a topping for a taco salad in a taco.
